THE INTERVIEW: Macy's Culinary Council Chef Cat Cora

Last week I was invited by Everywhere & Macy's to attend their Culinary Council (CC) event featuring CC Chef Cat Cora.  I was able to interview her before her cooking demonstration with Michelle of Texas Tanners and Myra of The Little Aslam, both bloggers in Houston.  The Macy's Culinary Council was created back in 2003 to change the way Macy's customers shop, cook, & eat at home. The current Council is comprised of 14 chefs, including Iron Chef Cat Cora. Cat currently resides in Santa Barbara, CA with her wife and 4 kids, but travels a lot with her career as co-host of Bravo TV's "Around the World in 80 Plates", opening restaurants, running Chefs for Humanity, writing books and much, much more! Her travels brought her to Houston last Wednesday to do a cooking demonstration of her favorite dishes from the Macy's Culinary Council Thanksgiving and Holiday Cookbook.

I had a prime seat at the cooking demo! I was able to bring a friend, and I brought along blogger Melissa of Jane Laced.

For the cooking demo, Cat showed us 3 recipes: Slow roasted pork, Alma's Sweet-Hot Mustard, and White Chocolate Pecan Pie.

What I learned from Cat at her Cooking Demonstration:
1. Cook meat that needs a long time in the oven when you actually have time!  Typically an hour to cook per lb of meat.
2.  Think of making jarred mustard for holiday gift, lasts for a couple of weeks
3. When preparing pork shoulder, cut 1" slits into the meat and insert garlic into the shoulder. Will help tenderize the meat.  The meat should be so tender after cook that it falls right off the bone
4. When prepping greens remove the woody parts

All the dishes were AMAZE. They had samples prepared for us to taste, and even I (who hates veggies, especially greens) liked the greens! Now, if I only I had the patience to attempt a meal like this on my own! :-).
